Cranberry Spinach Salad

Another one of my favorites from allrecipes.com

1 T Butter (or coconut oil)

¾ c Almonds, blanched and slivered

1 lb Spinach, rinsed and torn

1 c Dried cranberries or cherries

2 t Toasted sesame seeds

1 T Poppy seeds

½ c White Sugar

2 t Minced onion

¼ t Paprika

¼ c White wine vinegar

¼ c Cider vinegar

½ c Canola oil


  1. In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool. In a large bowl, combine spinach, almonds, and dried fruit.
  2. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, vinegars, and oil. Toss with spinach just before serving.
TOTAL COSTS: $3.75
Spinach $2 (Meijer)
Dried Fruit $.75 (Aldi's)
Almonds $.50 (Aldi's)
Sesame Seeds $.50 (Bulk)
Dressing - from stock

Variations:
Lightly sugar the almonds and substitute strawberries for the cranberries
Add grilled chicken for a meal.
